Crystallization and, why?
White flour-like parts on dried figs shows that the fig is natural. Dried figs have their own honey and sugar. Fig honey can come out outside, and get christallized.
Dried figs should be stored under 26% humidity. We observed that when the humidity adjustment was made, the sugar on the fig was formed later and in lesser amounts. However, it is still not possible to prevent sugar overflow to the skin of dried figs 100%.

The best dried figs are figs with a natural appearance, some with darker or lighter skin and with a different amount of crystallization.
Very light-colored or clean-looking dried figs should be avoided. Very perfect-looking figs with a bleached layered are the result of the hydrogen peroxide component used to preserve a better look longer.

If you want a perfect look, you can clean the exposed sugar on the skin of the dried figs with hot water.
You can trow for 2 minutes in hot water and let them dry for 7-8 hours. or simply wipe their skin with hot water. They will become soft and crystal-free.
